Heal the Heart Raw Beet Salad
Beets are my absolute favorite root veggie and lucky for me, they grow wonderfully here on Kauai. I know not everyone is down for the earthy flavor of raw beets, but this dish adds just the right amount of sweetness and crunch to please just abut anyone!

Ingredients
3-4 beets, depending on size
3 medium size carrots
1 cup of fresh chopped herbs, cilantro or parsley are best
1 C raw pumpkin seeds
3 tablespoons lemon juice or fresh squeezed citrus juice
2 tablespoons olive oil
a dash of maple syrup, to taste
salt and pepper to taste
Directions
Shred the beets and carrots into a bowl. Add the chopped herbs and pumpkin seeds, and mix it all together well. Now, add the citrus juice, olive oil, and maple syrup and mix well. You can taste test it and adjust if it needs more of any of the seasonings.
